ここからしばらくスネイプ先生のセリフは発音はそれほど難しくはありません。ですが、単語が難しかったり文章が長いのでわかりにくいかもしれません。

foolish wand-waving (「バカみたいに杖を振り回すことや」)、silly incantations (「くだらない呪文」) はこのクラスにはない。

as such はここでは接続詞的に「そういうことだから」といった感じです。
appreciate は「価値が分かる、よく理解する」です。何の価値が分かるかと言えば the subtle science and exact art (繊細な科学であると同時に真の芸術) that is potion-making (すなわち、薬の調合) のことです。that は関係代名詞で that is potion-making は先行詞である the subtle science and exact art を説明するものです。
I don’t expect many of you 〜 の部分は「君たちなんかの多くには期待していない」です。もちろん、薬の調合の本当の価値を認めることをです。
日本では (特に大学を受験するまでは) 学校で教える教科を大きくは理系と文系に分類する傾向があります。
欧米では学問の分野は大雑把には science と art に分類します。数学、物理、科学などは当然 science なわけですが、経済学やファイナンスなど社会科学系の分野も science です。一方、芸術や文学、哲学などは art に分類します。
potion-making は science であり art でもある両方の性質を兼ね備えた高尚な学問であるとスネイプ先生は考えています。
