what は関係代名詞で、その前の this is が省略されています。関係代名詞の what は the thing(s) which と同じなので、This is the thing which we are here for. と同じ意味になります。「こいつのために俺達はここに来た。」です。

one はユニコーンのことです。dead (死んでいる) は形容詞で one を後ろから修飾しています。形容詞は普通は修飾する名詞の前に置きますが、後ろに置いたときは one (which is) dead の関係代名詞 which と be動詞が省略されたものだと思うと微妙な違いがわかるかもしれません。「ちょっと前に一頭死んでるのを見つけた。」です。
